Pitta Pizzas

Ingredients:

  • 4 Wholemeal pitta bread
  • 80g of Mozzarella cheese
  • 1 Red pepper
  • 1 Courgette
  • 150g Mushrooms
  • 1Tbsp olive oil
  • 1 Tsp mixed herbs Salt and pepper to taste For the sauce:
  • 1 Tbsp olive oil
  • 1 Garlic clove (minced)
  • 1 Shallot
  • 1 Tbsp dried oregano
  • 4 Tbsp Tomato puree 1x400g Tin chopped tomatoes
  • 1 Can of sweetcorn
  • Fresh basil for serving (optional)

Pitta Pizzas

Method:



Preheat the oven to 180˚C.

1. Chop the pepper, courgette and mushrooms into cubes and drizzle with olive oil, salt, pepper and mixed herbs. Add them to the preheated oven for 15-20 minutes.

2. In the meantime, prepare the sauce. Heat the olive oil in a pan and add the garlic, thinly slice the shallot and add it to the pan with the oregano. Allow to sweat for 2-3 minutes before adding the tomato puree and chopped tomatoes. Bring to the boil and then leave to simmer for 20-25 minutes.

3. Now it’s time to assemble the pizza. Add a few tablespoons of sauce to the wholemeal pitta and top with the vegetables and sweetcorn. Finish off with the mozzarella cheese and return to the oven for a further 5-8 minutes. Option to serve with fresh basil.
