Pumpkin Cookie Recipe Page (Full Dairy, Autumn)

Ingredients:

  • 225g plain flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 115g unsalted butter, softened
  • 150g light brown sugar
  • 100g caster sugar
  • 1 large egg
  • 125g pumpkin purée
  • 1 tsp vanilla extract
  • 200g white chocolate chips (dairy)

Pumpkin Spice Cookies – An Autumn Favourite: 

    1. Preheat oven to 180°C (160°C fan). Line a baking tray with parchment paper.
    2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
    3. In a separate large bowl, beat the butter and both sugars until light and fluffy.
    4. Add the egg, pumpkin purée, and vanilla extract. Mix until smooth.
    5. Gradually add the dry ingredients to the wet mixture and stir until combined.
    6. Fold in the white chocolate chips.
    7. Drop spoonfuls of dough onto the prepared baking tray, spacing them apart.
    8. Bake for 10–12 minutes, or until the edges are lightly golden.
    9. Allow to cool on the tray for a few minutes before transferring to a wire rack.
