Pumpkin Spice Cookies – An Autumn Favourite:
- Preheat oven to 180°C (160°C fan). Line a baking tray with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
- In a separate large bowl, beat the butter and both sugars until light and fluffy.
- Add the egg, pumpkin purée, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Fold in the white chocolate chips.
- Drop spoonfuls of dough onto the prepared baking tray, spacing them apart.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- Allow to cool on the tray for a few minutes before transferring to a wire rack.
